Ingredients:
- 4 slices of artisan whole grain bread
- 2 ripe avocados
- 4 eggs
- 1 teaspoon white vinegar
- 1 small red onion, thinly sliced
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- Fresh herbs (chives, parsley, or cilantro), for garnish
- Optional: crumbled feta or goat cheese
Instructions:
Prepare Avocado Spread:
- Halve the avocados, remove the pits, and scoop the flesh into a bowl. Mash with a fork until creamy but still slightly chunky.
- Stir in red onion slices, red pepper flakes, salt, and pepper.
Toast the Bread:
- Toast the bread slices to your desired crispness in a toaster or on a skillet.
Poach the Eggs:
- Fill a saucepan with water, add white vinegar, and bring to a simmer.
- Crack an egg into a small cup, then gently pour it into the simmering water. Repeat with remaining eggs.
